La cecina de chivo artesana o “pata” de chivo es, posiblemente, una de las exquisiteces menos conocidas de la montaña de León, ya que el protagonismo es acaparado por el chorizo artesanal, la morcilla de león o la cecina de vacuno.

La cecina de chivo se elabora artesanalmente, adobando cada pieza con ajo natural, sal y pimentón de La Vera con Denominación de Origen. Ligeramente ahumada con leña de roble y curada al frío aire de las montañas de León, se consigue un sabor inigualable que muchos desconocen, pero al que no podrá resistirse una vez la haya probado.

La elaboración de embutidos caseros La Pradera de Fontún, y en este caso la cecina de chivo artesana, se lleva a cabo de forma totalmente natural, siendo fundamental la climatología, por lo que solamente lo elaboramos durante los meses fríos, que normalmente van desde octubre hasta marzo. Además, nuestra fábrica de embutidos se encuentra ubicadas en plena Reserva de la Biosfera del Alto Bernesga, declarada por la UNESCO en el año 2005. Su localización en la montaña central leonesa se extiende a los municipios de Villamanín y Pola de Gordón, con cumbres que alcanzan latitudes de más de 2100 metros, lo que nos hace desarrollar nuestra actividad en un marco incomparable para la elaboración de estos alimentos típicos de León.

La cecina de chivo artesana se puede adquirir por pieza completa o deshuesada, siendo así más cómoda para nuestra cocina. Su loncheado se realiza a cuchillo, al igual que el loncheado del jamón, siendo un picoteo con un sabor intenso y textura especial.

CONSERVACIÓN

Conservar en lugar fresco y seco, manteniendo el envase al vacío en las condiciones óptimas que se ha entregado al cliente. En caso de perder el vacío dicho envase por la manipulación, extraer el producto para evitar que se estropee y consumir

CONDICIONES DE USO

Producto listo para consumir. Extraer de su envase y dejar orear previamente.
